My personal favorite as a kid was pumpkin, with candied ginger and a dollop of whipped cream (the real stuff, not the spray stuff).

My wife the accountant and excellent baker did several cheesecakes (which she says qualify as pie because no crust around the sides) for her office. The cheese cakes include Bailey's. So it will be a "happy" day for those who are in her office today!
